Ingredients
  

  • 3 oz Low-fat turkey bacon, diced
  • 1 cup grape tomatoes, halved
  • 1 small onion
  • 2 cloves garlic, diced
  • 1 tsp olive oil
  • 3 sprigs fresh cilantro (optional garnish)

Instructions
 

  • Pre-heat a stove at medium-high heat. While it heats up, crack all the eggs into a bowl and scramble thoroughly. (Do not use a hand blender, if the eggs are blended the omelet will lose texture)
  • Once the stove is pre-hearted (water will bead on contact) add the oil, bacon and veggies (excluding the cilantro)
  • When the pan begins to sizzle (4-7 minutes), add the eggs and scramble slightly
  • Cover the pan and cook until all the egg has hardened (about 5 minutes)
  • Flip the omelet and cook for one more minute
  • Serve hot with a few sprigs of cilantro or parsley (optional)
