Ingredients
- 5 eggs
- 2 leaves bok choy or kale (or both!), chopped
- 1 small onion, sliced
- 2 garlic cloves, chopped
- 1 tbsp olive oil
- 0.125 tsp salt
- 0.125 tsp black pepper
- 0.125 tsp cumin
- 3 sprigs cilantro (optional garnish)
Instructions
- Pre-heat a stove at medium-high heat. While it heats up, crack all the eggs into a bowl and scramble thoroughly. (Do not use a hand blender, if the eggs are blended the omelet will lose texture)
- Once the stove is pre-hearted (water will bead on contact) add the oil and greens
- When the kale begins to wilt (3-5 minutes), add the eggs and scramble slightly
- Cover the pan and cook until all the egg has hardened (about 5 minutes)
- Flip the omelet and cook for one more minute
- Serve hot with a few sprigs of cilantro (optional)
