  • 5 eggs
  • 2 leaves bok choy or kale (or both!), chopped
  • 1 small onion, sliced
  • 2 garlic cloves, chopped
  • 1 tbsp olive oil
  • 0.125 tsp salt
  • 0.125 tsp black pepper
  • 0.125 tsp cumin
  • 3 sprigs cilantro (optional garnish)


  • Pre-heat a stove at medium-high heat. While it heats up, crack all the eggs into a bowl and scramble thoroughly. (Do not use a hand blender, if the eggs are blended the omelet will lose texture)
  • Once the stove is pre-hearted (water will bead on contact) add the oil and greens
  • When the kale begins to wilt (3-5 minutes), add the eggs and scramble slightly
  • Cover the pan and cook until all the egg has hardened (about 5 minutes)
  • Flip the omelet and cook for one more minute
  • Serve hot with a few sprigs of cilantro (optional)
