Ingredients
  

Dressing

  • 1 tbsp mayonaise homemade or paleo
  • ½ tbsp olive oil extra virgin
  • 1 tsp rice vinegar
  • tsp chipotle powder
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp mustard sauce

Chicken Lentil Bowl

  • 10 oz chicken breast grilled
  • ¾ cup pre-soaked and cooked green lentils should be soaked for 8 hours before cooking
  • ¾ cup cooked lentil pasta
  • 1 cup chopped parsley or cilantro (or ½ cup of each!)
  • 1 red bell pepper sliced

Instructions
 

Dressing

  • Put all the ingredients in a small bowl and mix thoroughly

Chicken Lentil Bowl

  • Divide the ingredients into two bowls, placing each ingredient into a different corner. My prefered order is: lentil, peppers, pasta, chicken, herbs.
  • Pour the dressing over the bowl
  • Serve and enjoy!
