Ingredients
Dressing
- 1 tbsp mayonaise homemade or paleo
- ½ tbsp olive oil extra virgin
- 1 tsp rice vinegar
- ⅛ tsp chipotle powder
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp mustard sauce
Chicken Lentil Bowl
- 10 oz chicken breast grilled
- ¾ cup pre-soaked and cooked green lentils should be soaked for 8 hours before cooking
- ¾ cup cooked lentil pasta
- 1 cup chopped parsley or cilantro (or ½ cup of each!)
- 1 red bell pepper sliced
Instructions
Dressing
- Put all the ingredients in a small bowl and mix thoroughly
Chicken Lentil Bowl
- Divide the ingredients into two bowls, placing each ingredient into a different corner. My prefered order is: lentil, peppers, pasta, chicken, herbs.
- Pour the dressing over the bowl
- Serve and enjoy!
